Steps of periodic cleaning in professional kitchens

Unlike daily cleaning, which focuses on immediate cleanliness, periodic cleaning targets areas that accumulate grease, dirt, and bacteria over time. These tasks are scheduled weekly, monthly or as required, depending on the level of use and regulatory requirements.

Weekly or as needed

Degreasing

Degreasers are highly effective at breaking down and removing grease, oil, and other organic residues that can accumulate on surfaces like stove tops, grills, fryers, exhaust hoods, and floors. Regular use of degreasers helps prevent the buildup of grease, which can lead to fire hazards and health code violations. 

Kiilto Pro Grease Foam is a highly effective choice for degreasing ovens, grease filters, and other surfaces, that tolerate highly alkaline detergents, in professional kitchens. Kiilto Pro Kraft on the other hand is suitable for pots, pans, fryers, grease filters and the degreasing of floors.

Ovens and grills

Cleaning ovens ensures food safety by removing grease, food particles, and bacteria, preventing contamination and foodborne illnesses. It also reduces fire hazards, improves cooking performance, reduces energy consumption, and extends the oven’s lifespan.   

Manual cleaning

When cleaning ovens manually, we recommend Kiilto Pro Grill. It is a strongly alkaline detergent, specifically developed for manual cleaning of ovens and grills. The detergent is applied to cooled surfaces (max +40 °C) undiluted and it can be used with a spray gun.

Self-washing ovens (liquid)

For self-washing ovens Kiilto Pro Oven Wash and Kiilto Pro Oven Rinse are an effective option. They have been designed for cleaning self-cleaning ovens and cooking equipment with automatic washing systems, as well as for the final rinse.

For a safer option we’ve developed Kiilto Pro Box safety packages. The Kiilto Box dosing system is a closed system which minimizes the risk of skin or eye exposure to the liquid. Using the colour-coded connecting hose, the product can be attached to the right dosing pump without difficulty, and cross-connection is also mechanically prevented.

Monthly or as needed

Descaling

Limescale builds up in a dishwasher due to water hardness elements. Deposits must be removed regularly because only a limescale-free dishwasher will ensure clean dishes. Descaling also extends the lifespan of a dishwasher. Descaling requires an acidic detergent, such as Kiilto Pro Kalk, which has been developed for professional kitchens.

Limestone or rust deposits can also cause issues in other appliances. It is important to remember the descaling of those too, including coffee makers, kettles and thermoses.

Regularly

Drains
