Cleaning instructions for professional kitchens to prevent the spread of viruses

Kitchen facilities should be cleaned normally even during exceptional situations, paying particular attention to a high standard of hygiene.

For pleasant premises and the safety of their users, care and frequent maintenance cleaning are important. Staff should be instructed to stay at home if they experience even mild symptoms.

Cleaning should be carried out with mildly alkaline detergents such as Kiilto Plusclean or Kiilto Forte. Cleaning can also be carried out with Kiilto Vieno fragrance-free or Kiilto 10 Universum fragrance-free detergent or other detergents or disinfectants normally used in cleaning, such as Kiilto Antibact. Cleaning should be carried out starting from the cleanest areas and progressing to the dirtiest areas. Special attention must be paid to all surfaces that are often touched, such as doorhandles, table surfaces and lightswitches. Customer and staff areas should be cleaned with different equipment, and both sets of equipment must be thoroughly cleaned after cleaning.

If a person who has either been confirmed or suspected to have the COVID-19 virus has been on the premises, the premises must be cleaned thoroughly before they can be used again. Normally, cleaning is mainly carried out using a mildly alkaline detergent or other detergent or disinfectant. After cleaning, contact surfaces and sanitary facilities in particular must also be disinfected. The most effective disinfectants against the coronavirus, which has a protein shell, are hypochlorite-based products such as Kiilto Hypo Dip and hydrogen peroxide-based products such as Tevan Panox 200. Other effective disinfectants are Kiilto Antibact, Kiilto Pluschlor, Kiilto Desichlor, and ready-to-use Kiilto Easydes Spray.

The recommended dosage of chlorine products in the event of an epidemic is 1,000 ppm chlorine, in which case the following concentrations are used: Kiilto Hypo Dip 1.0%, if the best-before date of the product is less than 6 months -> 2.0%, Kiilto Pluschlor and Kiilto Desichlor at a concentration of 50 ml per 950 ml of water. Tevan Panox 200 is a ready-to-use product, and therefore its concentration for use on surfaces is 100%.

As far as possible, disposable cleaning equipment should be used. Good cleaning towels are Prima universal towel and Prima single-use microfibre towel. If non-disposable equipment is used, care should be taken to clean it thoroughly after cleaning. Towels and other textiles must as a rule be washed at a temperature of between 60 °C and 90 °C. If a textile cannot withstand a high washing temperature, disinfectant should be used. Cleaning waste and contaminated disposable implements should be immediately packed in a separate rubbish bag that is tied closed and disposed of in a mixed waste container.

Attention must also be paid to self-protection during cleaning. Workwear and shoes must be easy to wash. When cleaning areas that are or have been occupied by a person who has been infected with COVID-19, it is recommended that a waterproof long-sleeved protective jacket or protective apron be used. The use of protective gloves is essential when cleaning surfaces. After cleaning, gloves must be either thoroughly washed and dried or replaced.

When removing protective equipment, care must be taken to avoid touching the outer surface. After removing protective wear, the hands must be thoroughly washed with warm water and soap, including the forearms. The World Health Organization also recommends the use of ethanol-based hand rubs. Disinfectants that are effective against the coronavirus and other viruses that have a protein shell include Erisan Käsihuuhde, Käsidesi and Erisan Etasept.
